Hi,

If you haven't seen it already, it sounds like you may want to start
with the FCC's federal reporting on broadband and mobile connectivity.
These national reports on internet connectivity and use have been
issued by the FCC each year since 2010.  They are written based on the
kinds of data that you are asking about, and in many cases, you can
drill down to get access to the FCC's data.

You may also want to bear in mind that the majority of the currently
dominant online services (twitter, pinterist, snapchat, etc) did not
have widespread adoption until late in the 2000s (e.g. youtube wasn't
founded until 2005 = no data from youtube from 2000-2005).  The
distribution of users (demographically speaking) has changed
dramatically during the period 2000-present, so much so, that there
are questions as to whether the user behavior of early adopters is
meaningful to compare to current users, and if so, then how to
stratify the data to make the discussion of the two population groups
commensurate.
